Using a cheap drum practice pad and some plugins to convert audio to MIDI.
But actually, the practice pad isn’t necessary, or the drum sticks, and the microphone could be replaced with a piezo element.

 

Plugins used:
JS: Audio To MIDI Drum Trigger (Stillwell)
JS: MIDI Velocity Scaler/Compressor (Stillwell)
Toontrack EZDrummer 2 + Post-Rock EZX

The Stillwell JSFX are included with REAPER and have zero latency.
I’ve also had good success with using Steven Slate Trigger 2, though there is some latency in the plugin.
